I’ve been slightly obsessed with coconut recently, though it is extremely high in fat (good fat) it’s also very good for you and really freaking tasty. This is my latest installment in the Coconut Chronicles; Vegan coconut Macaroons. I let them cook a little too long so they were drier than I had hoped but over all very delicious. Super simple to make too.
I just mixed together shredded coconut, agave, coconut milk (just the thick white part) and a smidge of lemon zest and a smidge of coconut flour. Bake at 350degrees for about 10-15 min or until slightly golden on top (mine are a little past slightly golden). I also melted dark chocolate and dipped half in that but it was good with or without the chocolate.

These are gorgeous!!! I love the additon of cocnut flour!!! Is coconut flour hard to find?

It’s not that hard to find, I have gotten it at Whole Foods and another small market here in SF….but if you can’t find it in a store I know you can order it online!
